
Eis Journey Through Time
1974
The Story Begins
Chef HIRO. Hiroyasu Aoki was born in Tokyo, Japan, where his journey began. After graduating from high school in Kanagawa, he went on to study at the renowned Tsuji Culinary Institute in Osaka, developing a strong foundation in Japanese cuisine, including its history, regional ingredients and traditions, as well as the art of ikebana.
1994
Refining the Craft
After graduating, HIRO moved to Düsseldorf, Germany, where he worked alongside sushi master Chef Matsushiro at Benkei Restaurant in the Nikko Hotel. There, he refined his skills in sushi and sashimi while serving sophisticated Japanese cuisine.
1996
A Journey to Melbourne
After arriving in Melbourne, HIRO began his career at Suntory on Queens Lane, followed by Aya in Armadale. These experiences shaped his understanding of restaurant management, operations and hospitality.
2001
Innovation Award Received
HIRO’s long-held dream became a reality with the opening of his own restaurant, Eis, on Bridport Street in Albert Park. The name Eis is derived from the phonetic spelling of “Ace,” reflecting his ambition to create something distinctive and exceptional.
2008
A New Chapter
The interior and rebranding of Eis were created by award-winning architects Albert Mo. His signature black-and-white aesthetic transformed Eis into a space that was fresh, airy, simple and chic.
2026
Beyond the Restaurant
After 25 years of being loved and supported by our loyal guests, Eis enters a new chapter through catering.
We remain close to the guests who have supported us over the years, continuing to share Chef Hiro’s passion for Japanese cuisine across a variety of occasions and settings.
